Santina shares her recipe for a little known pasta called “
lolli nte usa” in the
Modica area of
Sicily. The “
usa” is a corn or wheat stalk which is used to make pasta tubes, these are then rolled across the strings of a weaving comb to create a deeply grooved tube, similar to
rigatoni, except the the ridges are horizontal, not vertical. She serves it with the tomato sauce from a pork ragu. It’s fascinating to watch!
